Plants, history and medicine

You are surrounded by wild food!

Foraging introduces us to the weeds on our lawn, the wildflowers in our meadows and the mushrooms in our woodlands.

You’ll be surprised at just how nutritious and medicinal the plants you see everyday are!

Some of the earliest herbal texts date back to ancient Greece some 2000 years ago and we find a lot of the modern research backs up the claims made by our ancestors. When we discuss herbal medicine we like to reference peer reviewed journals.

Wild food is ancestral knowledge, studying it takes us back in time. Whether its 3000 year old nettle fibre cloths or 32,000 year old grinding stones with remnants of oats on, our species history is smothered with wild food and we like to explore that.

Learning the history and ethnobotany of our plants is key to the foraging journey!

Pine needle soda, delicious spring tonic.

Fermentation & Nutrition

Fermentation is an ancient method of preservation.

Not only does it increase shelf life it multiplies nutritional value, creating higher concentrations of vitamins and a variety of good gut bacteria, a hot topic right now!

Naturally sparkling healthy sodas and wild kimchi are a topic on conversation on courses!

But, you don’t have to ferment to get nutritional value in the wild.

We study the papers documenting the nutritional profiles of wild foods. Stinging nettles contain more vitamin C than oranges and more iron than spinach!

Velvet Shanks, East Sussex.

Wild

Mushrooms

Unlock the weird and wonderful world of fungi!

Mushroom hunting can feel quite daunting there are over 2000 mushrooms in the UK!

But as foragers we mainly focus on the most delicious and the most toxic, this keeps us safe and our taste buds thriving!

The mushroom season may start at the end of summer but you can find fungi 365 days of the year. One of the best edibles in the UK comes out in April!

We dig into identification, get comfortable with look a likes and study up to date peer reviewed journals exploring the roles fungi play on our planet.

All our courses teach you whats in season! This includes plants, mushrooms, fermentation, nutrition, history and medicine.
